Very simple salad that changes a little every time I make it. Feel free to add your favorite veggies or take one out if necessary! Ingredients:
1 1/2 lbs red potatoes, cubed and cooked |
1 (15 ounce) can sweet corn |
1 (15 ounce) can green beans |
2 cups grape tomatoes |
4 cups baby spinach, diced |
1/2 cup shredded carrot |
2 large cucumbers, diced |
1 cup gorgonzola |
Directions:
1. After cooking the potatoes, combine all ingredients and add dressing of choice and enjoy! |
