This is a healthy frittata recipe that has protein, complex carb and veggies Ingredients:
4 small yams cut into chunks |
1 tbsp garlic |
1 small onion |
1tbsp olive oil |
1 large tomato cut into chunks |
1 whole eggs |
6 egg whites |
salt and pepper to taste |
1 tsp dried basil |
Directions:
1. Boil the cubed yams until tender. 2. Fry the garlic and onions in the oil until tender. 3. Spread the yams and tomatoes evenly in the pan. 4. Pour the egg mixture over top and season. 5. Cook until the bottom is cooked (About 10 minutes) 6. Then lift the edges and allow some of the uncooked egg mixture from the top to run down. 7. Broil for 2-5 minute. |
