This is so tasty and never lasts long when I serve it. Eveyrone loves this. Hope you do too. Ingredients:
8 large potatoes peeled cooked and mashed |
8 ounces sour cream |
2 teaspoons salt |
1 teaspoon freshly ground black pepper |
2 tablespoons chopped chives |
1/4 cup butter |
10 ounce package frozen chopped spinach thawed and well drained by squeezing |
1 cup shredded cheddar cheese |
Directions:
1. In large bowl combine all ingredients except cheddar cheese. 2. Spoon into a greased two quart casserole. 3. Bake uncovered at 400 for 15 minutes then top with cheese and bake 5 minutes longer. |
