A very good light potato soup. Great on cold rainy days or anytime you need a lift. This is a perfect blend of flavors. Ingredients:
4 or 5 large russet potatoes, peeled and sliced |
1 large onion, sliced |
1 cup green onions or leeks, sliced |
1 bell pepper, seeds removed and sliced |
1 pound smoked sausage, sliced |
3 cups chicken broth |
1 cup sliced celery |
1 stick butter |
2 cups milk or half and half |
1/2 tsp. celery seed |
1/2 tsp. garlic powder |
1/2 tsp. cracked black pepper |
salt to taste |
parmesan cheese, optional |
Directions:
1. Boil potatoes until tender(about 15 minutes). 2. Drain potatoes an place in large soup pot. 3. In frying pan or skillet, cook onions, celery, bell pepper and sausage in butter until vegetables are just tender and sausage is lightly browned. 4. Add to soup pot. 5. Add broth and spices and bring to a boil. 6. Lower heat and cook on low to medium heat for 10 to 12 minutes. 7. Stir in half and half and green onions and continue to cook over low heat for 5 minutes. 8. Serve with good quality or homemade croutons and a sprinkle of parmesan cheese. |
