ridiculously easy vegan soup Ingredients:
1 onion |
1 potato |
1 stalk celery |
4 mushrooms |
1 -2 teaspoon olive oil |
2 cups vegetable stock |
4 garlic cloves |
1 teaspoon chopped parsley |
1 teaspoon ground black pepper |
Directions:
1. dice the vegetables, and fry them at a medium heat in olive oil in a soup pan until they start to take on colour. 2. add the potato, cover with vegetable stock and add the parsley, garlic and pepper. 3. cover, reduce the heat to low and leave to simmer for half an hour. 4. blend the soup, and then return to a medium heat before serving. |
