I had this at a church meal. I love vinegar and potatoes together so I really enjoyed it. Ingredients:
2 lbs red potatoes |
3 sprigs fresh parsley |
3 -4 fresh bay leaves |
1/4 cup extra virgin olive oil |
1/2 cup red wine vinegar |
salt |
Directions:
1. Cube and boil potatoes until tender. 2. Dice herbs and add to cooled potatoes. 3. Combine olive oil and vinegar, pour over potatoes and herbs and stir to coat. 4. Season with salt to taste. |
