An easy peasy bake that all the family will love. Great to use up leftover ham or extra potatoes.... Ingredients:
1kg potatoes, (and/or sweet potatoes/ pumpkin) thinly sliced |
200g ham, chopped |
35g sachet of french onion soup |
300g extra light sour cream |
1/2 cup water |
1/4 cup chopped parsley |
1/4 cup breadcrumbs or bran |
1/2 cup grated parmesan cheese |
olive oilspray |
Directions:
1. Preheat oven to 200deg C. 2. Lightly grease an 8 cup capacity ovenproof dish. 3. Bring a saucepan of water to the boil. 4. Add potato slices and cook 5 mins; drain... 5. Layer 1/3 potato slices into dish. 6. Scatter with 1/3 of ham. Repeat layers finishing with the ham. 7. Empty soup sachet into a bowl and stir in sour cream, water and parsley. Pour over potatoes. 8. Combine breadscrumbs and cheese and scatter over the top. 9. Spray well with oil spray, and bake 25 mins until golden and tender. 10. Serve with salad and crusty bread! |
