1 lb. red potatoes |
1 lb. string beans |
1/4 cup chicken broth |
2 tbsp white wine vinegar |
1/4 tsp dried oregano |
1/8 tsp salt |
1/8 tsp black pepper |
1/4 cup olive oil |
Directions:
1. Cook potatoes. Boil string beans, 3 to 5 minutes. Drain and place in ice water for 5 minutes. 2. Cut potatoes. Transfer to a bowl and toss with broth, vinegar, oregano, salt, and pepper. Let stand. Toss again. Add green beans and olive oil. Toss. |
