This is a very easy and very tasty frittata recipe that I have tried on several occasions. It came from an estate sale a few years ago and I make it often for Sunday breakfast. Enjoy. Ingredients:
5 potatoes sliced |
1 large onion sliced |
2 cloves garlic |
1/2 cup grated cheese |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
6 eggs |
Directions:
1. Fry sliced potatoes then add sliced onion and garlic and fry until nicely browned. 2. Beat eggs then add salt, pepper and grated cheese. 3. Pour egg mixture over potatoes and fry on medium heat. 4. When it looks set place a plate on top of frying pan and flip over. 5. Brown on the other side for a few minutes. 6. Serve hot. |
