This soup is very tasty and wonderfully filling. I'll make a huge pot of it and eat it over the course of a few days. Ingredients:
5 medium potatoes, peeled and diced |
6 1/4 cups water |
4 cloves of garlic, sliced |
3 tbsp olive oil |
1/4 lb cabbage |
1 salt and pepper to taste |
Directions:
1. Peel and cut up potatoes, and boil in salted water, with garlic. 2. When soft, mash and add olive oil and cabbage or kale. 3. Boil uncovered for about 3 minutes. 4. Season to taste. 5. Hit it with a stick blender until it reaches the desired consistency |
