This is a recipe my Aunt (who CAN'T cook) gave me about a year ago. Great for a cold day! Ingredients:
2 stalks broccolli |
4-6 red or new potatoes |
1 can evaporated milk |
1 stick butter |
thickening (1/4 cup flour mixed with 1 cup water) |
salt & pepper to taste |
cheese (optional) |
Directions:
1. Peel and cut potatoes into bite size chunks 2. Chop Broccolli 3. Place in a large saucepan and cover with water. 4. Cook until potatoes are tender. 5. Add Butter and Evaporated milk. 6. Cook about 10 minutes and add thickening. 7. Cook until soup is good and thick. 8. Serve with shredded cheese, or not! :) |
