Potaoe Salad With Beets

This recipe was introduced to me in a New Years party. My God-daughters mom who is from Nicaragua made it and I loved it. Hope you like it too!!
Ingredients:
5-6 potatoes
3 eggs
2 tbsp of mayo
1 can of sliced beets
1 can of green beans
salt
pepper
Directions:
1. Boil potatoes whole with a bit of slat without removing the skin until done
2. remove from water let cool about 10 min
3. boil eggs until hard boil
4. peel potatoes once cooled and cut into small chunks, put in bowl
5. peel eggs and cut in 4 add to potatoes
6. add beets cut into small pieces (drain water)
7. add beans (drain water)
8. add mayo and salt and pepper to taste
9. Stir and serve!!
10. ** Again like many of my recipes it's all about preference, if you like a lot of mayo then add more or use light mayo (which is what I like) more eggs or less eggs or even if its just for one person you can cut the recipe down**
