Ingredients:
3 lbs beef roast |
2 tablespoons oil |
1 cup chopped onion |
4 cups beef broth |
5 carrots, 1 in chunks |
5 potatoes, 2 in chunks |
1 1/2 cups sliced celery |
1 teaspoon salt |
1 teaspoon pepper |
1 teaspoon oregano |
1 bay leaf |
1/2 teaspoon thyme |
1 cup diced tomato |
Directions:
1. In dutch oven, brown roast in oil. 2. Add onions and saute briefly. 3. Add broth; cover and cook on low for 2 hours;,add more broth if necessary. 4. Add all other ingredients. 5. Bring to a boil. 6. Reduce heat to low and cook for 1-1/2 hours more. |
