from the menu of Atlantic Star, Decatur GA Ingredients:
1/4 cup olive oil |
2 pound beef roasts (or one 2-pound roast cut in half) |
3 carrots, peeled and cut into large pieces |
3 celery stalks, cut into large pieces |
1 large yellow onion, cut into large pieces |
2 large potatoes, peeled and cut into large pieces |
1/4 cup garlic, whole |
2 large tomatoes, chopped |
3 cups beef broth, low-sodium |
1 teaspoon fresh thyme, de-stemmed and chopped |
1 salt and pepper to taste |
Directions:
1. In a large braising pan on medium-high heat, add oil. 2. Add the beef roasts and brown on all sides. 3. Remove the roasts from the pan and set aside. 4. Add carrots, celery, onion, potatoes and garlic to the pan and saute until lightly brown. 5. The remove the vegetables from the pan and set aside. 6. Return the beef roasts to the pan, add tomatoes, beef stock and thyme, cover and cook on low heat for one hour. 7. Add reserved vegetables and cook an additional 30 minutes (add a little more broth if needed). 8. Remove from heat and let rest, covered, for 20 minutes. 9. Season to taste and serve. |
