Ingredients:
1 pound boneless pork shoulder, cubed |
2 cups white hominy |
1 quart water |
1/3 cup chopped onion |
1 tablespoon crushed red pepper |
1 teaspoon whole peppercorns |
1/8 teaspoon dried whole oregano |
salt to taste |
Directions:
1. Combine all ingredients in a large Dutch oven, and bring mixture to a boil. Reduce heat; cover and simmer for 2 1/2 hours or until hominy is soft. |
