This recipe was made at an office social, and now I make it at home. It's so delicious I now go out of my way to buy hominy and keep it on hand. Ingredients:
1 gallon hominy |
2 onions, diced |
8 garlic cloves, pressed |
5 -6 chicken breasts or 5 -6 pork loin |
4 -6 cups chicken broth |
16 ounces green chilies |
1 teaspoon ground red pepper |
1 teaspoon cumin |
1 teaspoon coriander |
1 lime, juice of |
salt and pepper |
1 bunch cilantro |
Directions:
1. Brown meat and add onions and spices. 2. Add hominy with juice, chilies, and broth. 3. Let simmer 2 hours. 4. Squeeze in lime and add cilantro. 5. Continue cooking for 1 hour before serving. |
