This is my mother-in-law's recipe and it is great! Ingredients:
2 pounds winter squash, peeled, seeded and cut into chunks |
2 eggs, beaten |
3/4 cup mayonnaise |
1 small onion |
1/4 cup chopped green bell pepper |
1 cup grated parmesan cheese |
1/2 cup bread crumbs |
Directions:
1. Butter and flour one 8x12 inch baking pan. Preheat oven to 350 degrees F (175 degrees C). 2. In a pot of lightly salted water, boil squash and onion until tender. Drain well. 3. In a mixing bowl, combine squash, eggs, mayonnaise, onion, bell pepper and cheese. Place into baking pans, sprinkle with bread crumbs, bake for 30 minutes. |
