Ingredients:
3 tablespoons vegetable oil |
1/4 cup minced garlic |
2 cups thinly sliced red onions |
2 cups thinly sliced yellow onions |
1/2 cup seeded and diced fresh red chili pepper |
8 tomatoes, cut into 6 wedges |
2 lbs uncooked large shrimp, peeled, cleaned, and deveined |
2 cups tomato juice |
1/2 cup chopped scallion |
1/4 cup chopped parsley |
1/4 cup chopped cilantro |
Directions:
1. In a stock pot, warm the oil over moderately high heat. Add the garlic and onions and sauté for 5 minutes. 2. Stir in the chilies, tomatoes, salt and pepper, and the shrimp. Cook, stirring and tossing, for 5 minutes. 3. Add the tomato juice and scallions and bring the mixture to a simmer. Stir in the parsley and cilantro and cook for 1 minute. Serve hot. |
