I do not know why this is called PORTUGUESE SOUP, but it is wonderful and (mostly) healthy!! :) Ingredients:
portuguese soup |
1 lb smoked sausage |
1 lb hot links |
2 cups chopped onions |
6 cloves garlic, chopped |
6 tbsp oil |
1 can kidney beans |
.1 cup uncooked macaroni (your choice variety) |
1 head green cabbage, chopped |
1 cup chopped carrots |
12 small new potatoes, quartered |
2 cups catsup |
1/4 cup vinegar |
10 cups (2 1/2 quarts) beef stock |
salt & pepper to taste |
cut meat into bite size pieces. |
brown in soup pot then remove meat. |
sauté onions and garlic in meat juices and oil until |
transparent. |
add remaining ingredients and meat. |
simmer 45 minutes. |
