A traditional soup to feed the people at the feast. Ingredients:
5 pounds beef roast cut into chunks |
1 cube butter |
30 ounces tomato sauce |
3/4 cups red wine |
1/4 cup white vinegar |
6 cloves garlic smashed |
1 large onion diced |
1 1/2 cinnamon sticks |
15-20 whole allspice |
1/2 teaspoon ground allspice |
1/4 teaspoon ground cloves |
4 whole cloves |
2 bay leaves |
2 teaspoon cinnamon |
salt and pepper to taste |
water |
1 large head cabbage |
1 loaf day old french bread |
Directions:
1. Melt butter in large kettle 2. brown beef in butter 3. add tomato sauce, wine and vinegar 4. fill kettle 3/4 full with water 5. add garlic, onion, ground spices and salt and pepper 6. place whole spices into a spice ball and add to pot 7. Boil 3-4 hours on low heat 8. quarter and core the cabbage and add to pot 9. cook an additional hour or until cabbage is cooked 10. cut thick slices of bread and place into a large bowl 11. spoon sopas over the bread let stand for 10 minutes 12. options larger amounts of spice can be used for a more robust flavor. Sprigs of mint can be placed on the bread before covering with sopas and removed before serving. |
