Serve with rice and beans, Fried Sweet Plantains fried sweet plantain and a green salad. Ingredients:
1 lb pork tenderloin |
salt & freshly ground black pepper |
1 teaspoon paprika |
1 tablespoon butter |
1/4 cup onion, sliced |
1/2 cup mushroom, sliced |
1/3 cup dry white wine |
1/4 teaspoon dried rosemary |
1 tablespoon fresh lemon juice |
2 tablespoons fresh parsley, chopped |
Directions:
1. Season tenderloin with salt, pepper and paprika. Saute pork in butter until golden brown. Add sliced onions and mushrooms. Saute for a minute or two. Add wine and rosemary. Cover and cook over low heat for 45 to 60 minutes, or until done. Add lemon juice and parsley just before serving. |
