Portuguese Kale Soup My Way |

Went looking for a Portuguese Kale soup to make and after reading through at least 25 recipes for it, I took what I liked about some and made my own version....and it's a keeper. Ingredients:
1 tbls. olive oil |
1 lb. chorizo (can also use spanish chorizo, sliced into chunks which i prefer) |
1 onion, diced |
2 cloves garlic, minced |
4 potatoes, cubed |
6-8 cups chicken broth |
2 carrots, diced |
1 bunch kale, stemmed, washed and chopped |
1 15 ounce can canellini beans |
salt and pepper to taste |
(if you like it hotter, add red pepper flakes) |
Directions:
1. Remove casing from chorizo 2. Heat oil in skillet 3. Cook chorizo and onion until fat from chorizo is cooked out 4. Add garlic and cook another minute 5. Drain fat 6. Add other ingredients except kale 7. Bring to boil then lower heat and simmer 15 minutes 8. Add kale and simmer until tender |
