This is a family favorite my mom got from a friend when I was a child. It is simple & inexpensive to prepare and stores very well. I like to cook a really large portion and freeze the extra in gallon freezer bags for a hearty meal I can heat and serve on a busy day. Ingredients:
2 bunches fresh kale |
1 lb stew beef |
1/2 lb linguica (as spicy or mild as you like) |
4 potatoes (your favorite) i like red! canned new potatoes work in a pinch, just don't add them til near the end. |
3-4 large slice carrots are equivalent of tiny carrots |
salt & pepper to taste |
beef bouillan |
the amounts given are my best guess...the recipe i got from my mom didn't include any specific amounts, only the ingredients |
Directions:
1. Slice linguica and dice stew beef & brown 2. Place meat in large stew pot and fill with water & bouillan about 3/4 full 3. Add vegetables 4. Simmer and stir for at least 2 hours, the longer it cooks, the better it tastes! 5. Serve with a rustic bread and enjoy! |
