Portuguese Char-grilled Shrimp With Lemon Butter |

I love ordering fresh wild gulf (head on) shrimp from my local fishmonger. These were a part of my Portuguese dinner last night. My only complaint is that I wish I had more! Ingredients:
12 wild gulf prawns, shell on, deveined and butterflied |
1/4 cup butter |
splash of olive oil |
1 clove garlic, crushed |
1 lemon, sliced (divided) |
fresh ground pink himalayan salt & fresh ground black pepper |
fresh parsley, minced |
piri piri sauce, to serve |
Directions:
1. Place butter, olive oil, garlic, half of lemon and some fresh parsely in a small saucepan. Heat until butter melts and is infused with the garlic and lemon. 2. Lay prepared shrimp out on a platter, Season lightly with salt and pepper. Lightly baste with lemon butter. 3. Heat a charcoal grill and lay shrimp open side down, with the remaining lemon slices. Grill for 1-2 minutes them flip, basting with a bit more of the lemon butter. 4. Transfer shrimp to serving platter when done and pour remaining lemon buttter on top. Serve with Piri Piri and grilled lemon slices. |
