This is a wee bit different from the other recipes here in Zaar. The prep time does not include the soaking of the beans. Ingredients:
1 lb kale |
1/3 lb dried small white beans, soaked in water overnight and drained |
1/2 cup olive oil |
3 medium onions, peeled and thinly sliced |
3 quarts chicken stock |
1/2 lb linguica sausage (portuguese sausage) |
1/2 lb potato, peeled and grated |
salt and pepper |
Directions:
1. Remove the large ribs of the kale and slice the leaves into very thin strips, as thin as possible. 2. Place in a bowl of cold water for 1 hour. Drain well. 3. In a 8 qt soup pot, saute the onions in the olive oil. 4. Add the kale, chicken stock and remaining ingredients, including the drained beans. 5. Simmer for 1 1/2 hours, covered. 6. Taste for salt and pepper before serving. |
