My mom used to make this simple cake a lot when we were growing up. Ingredients:
1 1/2 cups granulated sugar |
4 cups all-purpose flour |
1/4 teaspoon salt |
1 tablespoon baking powder |
1 lemon rind |
4 large eggs |
1/4 cup milk |
1/4 lb shortening, room temperature |
Directions:
1. Preheat the oven to 350°F Grease and flour two 9 x 9 x 2 inch pans. 2. In a large bowl, combine the sugar and eggs and beat together until creamy. Add the flour, salt, baking powder, and lemon rind mixing thoroughly. 3. Add the milk to the batter, once combined, then blend in the shortening. 4. Divide the batter between the two pans, flatten out and smooth the top with your fingers. 5. Bake for 30 - 40 minutes or until the cake is golden on top, and a cake tester comes out clean. |
