Portuguese Bean Soup is not only a very flavorful soup but a filling one, too. The rich broth comes from the smoked meats used to make the base and the added vegetables make the soup a reasonably healthy meal. When served with a side of fresh baked rolls and a small simple salad, you'll have a meal fit for a king. Ingredients:
2-3 meaty and smoked ham hocks |
12 cups water |
1 pound hamburger |
1 portuguese sausage, sliced or beef kielbasa |
1 15-ounce can kidney beans, drained and rinsed |
2 8-ounce cans tomato sauce |
2 carrots, diced |
2 onions, chopped |
4 stalks celery, chopped |
2 potatoes, diced |
1/2 head cabbage, shredded |
1/2 pound macaroni, boiled |
Directions:
1. Boil the ham hocks in water for 2 hours (to get the smoky flavor into the broth.) 2. Add hamburger and sausage, then beans, tomato sauce and carrots. 3. Cook 10 minutes. 4. Add onion, celery and potatoes; cook 20 minutes. 5. Add remaining ingredients. 6. Cook 10 more minutes. 7. Season if needed with salt and pepper. |
