1 lb dried kidney beans |
4 quarts water |
1 large smoked ham shank |
1 (8 ounce) can tomato sauce |
1 cup chopped onion |
1 garlic clove, minced |
2 tablespoons salt |
1/2 teaspoon pepper |
2 cups cubed potatoes |
1 1/2 cups diced carrots |
6 cups shredded cabbage |
8 ounces uncooked spaghetti, broken into small pieces |
Directions:
1. Wash & drain beans. 2. In an 8 qt kettle, bring water to boil. 3. Add beans, ham, tomato sauce, onion,garlic, salt, and pepper. 4. Bring to a boil; reduce heat and simmer covered 5 hrs (you could use a crock pot). 5. Add potatoes, carrots, cabage, and spaghetti. 6. Bring to a boil. 7. Reduce heat and simmer uncoverd 15-20 minutes or until potatoes are tender. 8. Remove ham. 9. Remove meat from the bone and cube. 10. Return meat to soup. 11. Serve with garlic bread and salad. |
