Ingredients:
4 tablespoon(s) olive oil
1 large red onion thin sliced
1/2 teaspoon(s) pepper
1/4 teaspoon(s) salt
1/3 cup(s) milk
1/2 cup(s) plain dry bead crumbs
4 portobello mushrooms
3 clove(s) garlic
1 pound(s) spinach no stems
1/15 ounce(s) can white beans - rinse
3/4 cup(s) vegetable broth
1/2 cup(s) parmesan cheese
Directions:
1. ) 1 Tablespoon oil Add onion, salt, pepper stir occasionally tell carmelled - brown
2. ) Dip portobello mushroom in milk & bread crumbs.
3. ) 1Tabespoon oil - medium heat mushrooms gill side down heavy pie pan on top for weight cook till brown ( 6 min ) use mitt remove plate tune mushrooms add 1 more Tablespoon oil replace plate cook till brown ( 6 min )
4. ) 1Tablespoon oil deep skillet add garlic - cook it smell 20 - 30 secs. Add spinach cook/ stir till droopy 2 min. Add beans, broth 1/4 teas pepper 1/8 teas salt stir - heat 2 min
5. ) cut mushrooms thin slices serve over spinach Top / Cheese
