Great appetizer or lunch! Possibilities are endless. Found this online a few years ago, have modified it somewhat. Ingredients:

4 large portobello mushrooms |
2 t butter or margarine |
2 cups fresh spinach, or frozen (thawed and drained) |
1 cup chopped onions |
2 t chopped garlic |
salt and pepper, to taste (optional) |
1 cup spaghetti sauce |
1 t italian seasoning |
1 small can sliced ripe olives, drained |
2 roma tomatoes, chopped |
1/2 c shredded mozzarella cheese |
Directions:
1. Preheat oven to 400 degrees. 2. Wipe mushrooms with a damp paper towel to remove any dirt. Lightly brush them witholive oil and place rounded side down on a baking sheet. 3. In a nonstick skillet over medium heat, melt the butter or margarine and saute the spinach, garlic, and onions until onions are slightly translucent. 4. Add salt and pepper while cooking. 5. Stir the Italian seasoning into the spaghetti sauce 6. Evenly divide the spaghetti sauce over each mushroom, then the spinach-onion mixture. 7. Top each pizza with olives, tomatoes and cheese. 8. Bake for 8 to 10 minutes, until the cheese melts, and pizza is heated through |
