Portobello Pizza Ingredients:
1 teaspoon extra virgin olive oil |
1 garlic clove, minced |
1 (6 ounce) package portabella mushroom caps, cleaned (4 to 5) |
1/4 teaspoon salt |
1/8 teaspoon black pepper |
6 slices mozzarella cheese |
2 tomatoes, ripe, cut into 1/2-inch slices |
5 fresh basil leaves, chopped |
Directions:
1. Preheat oven to 450 degrees Fahrenheit. 2. Coat a pizza pan with cooking spray. 3. In a small bowl, combine olive oil and garlic. 4. Brush mushroom caps on all sides with garlic mixture; place upside-down in a circle on the pizza pan. 5. Season with salt and pepper. 6. Top evenly with mozzarella cheese, tomato, and chopped basil. 7. Bake 3 to 4 minutes, or until warmed through and the cheese is melted. |
