Ingredients:
1 teaspoon extra virgin olive oil |
1 garlic clove, diced |
6 ounces portabella mushroom caps, cleaned |
1 pinch salt |
1 pinch black pepper, freshly ground |
12 ounces mozzarella cheese |
10 fresh basil leaves |
2 tomatoes, fresh roasted and sliced |
oregano leaves (optional) |
Directions:
1. Combine oil and garlic in a small bowl and rub the mushroom caps on all sides with the mixture. 2. Place caps, top side down, in a circle on an oiled baking sheet. 3. Season with salt and pepper. 4. Arrange the cheese, basil, and tomato slices alternately in a circle on top of the mushrooms. 5. Sprinkle with oregano, if using. 6. Bake at 450 until the cheese melts, about 3 minutes. |
