Delicious alternative to meat sandwich Ingredients:
1 cup butter |
5 sun-dried tomatoes |
1 red chili pepper |
1 garlic clove |
1 sprig thyme leaves |
4 large portabella mushrooms, only caps |
sourdough bread |
2 tablespoons spicy brown mustard |
1 bunch watercress |
fresh ground black pepper |
fresh ground sea salt |
Directions:
1. Preheat oven 400 degrees F. 2. de-seed chile. 3. chop up tomatoes, chile, garlic and thyme leaves. 4. mix with butter. 5. season to taste with salt/pepper. 6. spoon mix into mushroom caps. 7. bake for 15 minutes. 8. spread mustard on sourdough bread. 9. add watercress on top of mustard. 10. place baked mushroom on watercress. 11. cover with bread. |
