Portabella Mushroom Salad |

The mushrooms can be made in advance and refrigerated until ready to serve. This is my family's favorite salad, and it looks beautiful. Ingredients:
3 -4 portabella mushrooms |
salt |
pepper |
olive oil |
1 head romaine lettuce |
cherry tomatoes |
2/3 cup oil |
1/4 cup vinegar |
1/4 cup sugar |
1 garlic clove, crushed |
1/2 teaspoon salt |
1/4 teaspoon dry mustard |
1/4 teaspoon paprika |
Directions:
1. Mushrooms: Season with salt and pepper, drizzle with olive oil. 2. Broil 8-10 minutes on low. 3. Dressing: Combine all ingredients and whisk. 4. Place lettuce, tomatoes, mushrooms, and dressing in large salad bowl. Toss. |
