This is from Emeril's Creole Christmas It's here for safekeeping :) Ingredients:
1/2 cup chopped onion |
1/2 cup chopped carrot |
2 bay leaves |
3 cups port wine |
Directions:
1. Combine all of the ingredients into a medium sized saucepan and over medium heat, bring to a boil. 2. Continue to boil until the mixture thickens and reduces to about 1/2 cup, about 30 minutes. 3. Strain through a fine mesh strainer and let cool. 4. Use at room temperature. |
