My mom makes this cheese spread for every holiday, and it is a hit wherever I take it, too. Originally from a cookbook called Two Burners and an Ice Chest , it is a keeper! Ingredients:
1/2 lb. port salut cheese (kaukauna port-wine cheese spread can be substituted) |
1/2 lb. sharp cheddar, grated |
1/2 lb. butter |
1/4 cup chopped almonds |
3 oz. brandy |
Directions:
1. Let cheeses and butter soften. 2. Grate cheese. 3. Cream butter and cheeses together with heavy-duty mixer or food processor. 4. Add brandy and nuts. 5. Best if made a week or so before serving. Serve with a sturdy cracker, and pull it out of the fridge awhile before serving - to make it easier to spread - especially if you use actual Port Salut Cheese. 6. Keeps almost indefinitely.... seriously - months and months, thanks to the brandy. |
