Port-simmered Prunes With Mascapone |

Sweet prunes simmered in whole spices,nestled in mascarpone or served with ice cream. Ingredients:
30 pitted prunes |
13/c dry red wine |
3/4c tawney port |
3/4c plus 1 tbs. sugar |
2 cinnamon sticks |
5 whole cloves |
5 whole allspice berries |
1 star anise |
2c mascarpone9creamy italian cheese) |
grated rind of 1 lemon |
Directions:
1. In a medium heavy saucepan,combine prunes,wine,port,3/4c sugar,cinnamon,cloves,allspice and star anise. Bring to a boil over med-high heat. Lower the heat and simmer gently about 45 mins. or until the liquid turns syrupy. Cool slightly. Remove the cinnamon,cloves,allspice and staranise from the liquid 2. In a medium bowl,combine the mascarpone,lemon rind and remaining 1 Tbs sugar. On each of 6 dessert plates,place a 1/3c mound of mascarpone. Using a spoon,spread it into a wide well. Set 5 prunes in the center of each well and top with syrup. |
