2 garlic cloves |
1 bay leaf |
4 tablespoons port wine |
1 tablespoon olive oil |
1 tablespoon cider vinegar |
2 teaspoons paprika |
1 teaspoon salt |
1 teaspoon pepper |
1 lb chicken thigh, boneless, cubed in 1 inch pieces |
1/2 cup parsley, chopped, garnish |
1 tablespoon olive oil |
1/2 cup onion, minced |
Directions:
1. Combine garlic, bay leaf, port wine, olive oil, cider vinegar, paprika, salt and paper in a plastic bag. 2. Add chicken; marinate chicken overnight. 3. Sprinkle parsley on a plate. 4. Heat 1 Tablespoon olive oil. 5. Add chicken that has been taken out of the marinade. 6. Add onion; cook until brown on edges. 7. Place on top of parsley. 8. Can serve with rice. |
