3 oz. lean pork |
1/2 small onion |
1 clove garlic |
1/2 tsp. fresh rosemary |
1/2 tbsp. olive oil |
1 tbsp. white wine |
1/2 fresh medium zucchini |
Directions:
1. Trim pork of all visible fat and cut into 1-inch cubes. Cut onion into wedges, slice zucchini into thick slices and mince garlic. In a deep dish, combine oil, wine, garlic and rosemary; add pork, zucchini and onion to dish, toss to coat, cover with plastic wrap and refrigerate for at least 30 minutes. Alternately thread pork, zucchini and onion onto skewer(s). Discard marinade. Grill or broil; turn every 5 minutes until well done, about 15 minutes. Serve. |
