Pork with Vegetables and Cashews |

Ingredients:
1 lb boneless fresh pork, cut into 3/4-inch cubes (fresh shoulder meat) |
1 medium onion, sliced and separated into rings |
2 tablespoons soy sauce (import. if avail) |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 packet frozen peas |
8 ounces fresh mushrooms, sliced |
1 tablespoon cornstarch |
2 tablespoons water, cold |
1 jar pimiento, sliced (2 ozs) |
1 cup salted cashews or 1 cup peanuts |
Directions:
1. Mix pork, onion and soy sauce in 3-qt casserole. 2. Cover and microwave on medium (50%) until meat is no longer pink, 12 to 15 minutes. 3. Stir every 3 minutes. 4. Stir in salt, pepper, peas and mushrooms. 5. Cover and microwave on medium (50%) 9 minutes. 6. Stir every 3 minutes. 7. Blend cornstarch and water; stir into meat mixture. 8. Stir in pimiento. 9. Cover and microwave on medium (50%) until meat is tender, 9 to 12 minutes, stirring every 3 minutes. 10. Stir in cashews. 11. Cover and let stand 5 minutes. 12. Serve with rice if desired. |
