Pork with Roasted Peppers & Potatoes

I got this recipe out of a cookbook that was given to me at a food show that I was at, entitled The Best of the Carolinas . This is an excellent dish, and oh so easy!
Ingredients:
4 boneless pork chops, 1/2 inch thick
1 tablespoon olive oil
4 medium red potatoes
1 medium onion
1 teaspoon dried oregano leaves, crushed
1 cup chicken broth
1/2 cup diced roasted red pepper
Directions:
1. Season chops with Black Pepper.
2. Heat oil in nonstick skillet over medium-high heat.
3. Add chops and cook 10 minutes or until browned.
4. Remove chops.
5. Add potatoes, onion and oregano.
6. Cook 5 minutes or until browned, stirring occasionally.
7. Add chops, broth and peppers.
8. Heat to a boil.
9. Cover and cook over low heat 5 minutes or until done.
