Pork With Pineapple Salsa |

This is a great fast way to fix a pork loin. My family loves it. The tangy salsa is just right. This is good for big family gatherings. Ingredients:
1 (20 ounce) can unsweetened pineapple tidbits |
1 (1 -1 1/2 lb) pork tenderloin |
3 tablespoons brown sugar, divided |
2 tablespoons dijon mustard |
1 teaspoon paprika |
1/2 teaspoon ground ginger |
1/3 cup chopped sweet red peppers or 1/3 cup green pepper |
1/4 cup chopped green onion |
1/4 teaspoon red pepper flakes |
Directions:
1. Drain pinapple, reserving 1/4 cup juice. 2. Set aside 1 cup pineapple. 3. Place pork on a rack in a shallow roasting pan. 4. Combine 2 tbls paprika, mustard, ginger. Spread half over pork. 5. Bake uncovered at 450 degre.s for 15 minutes. 6. Spread with brown sugar mixture. 7. Bake 15-20 minutes longer or until meat reaches 160 degrees. 8. For the salsa combine the red or green peppers, onions, pepper flakes, pineapple and juice in a bowl. 9. Let pork stand five minutes before slicing. 10. Serve with a spoonful of salsa on top. |
