Full of flavor and yet simple and inexpensive.Easy to expand for more servings Ingredients:
1/2 pound orzo pasta |
1/2 cup balsamic vinegar |
1 pint strawberries quartered |
1/2 cup basil leaves torn |
1 cup baby spinach leaves |
olive oil |
4 thin slices of prosciutto |
4 pork chops or thin pork tenderloin |
3 tblsp butter |
a pinch of cinnamon |
a pinch of nutmeg |
1/3 cup pines nuts toasted |
Directions:
1. Bring a large of water to boil, add pasta and drain( i like to add a little olive oil so the pasta wont stick) 2. In a saucepan, boil the balsamic vinegar until reduced to 2 or 3 tablespoons,about 5 minutes 3. In a bowl toss the strawberries with the spinach and basil and add balsamic glaze 4. In a large skillet add olive oil and cook prosciutto about 5 minutes and transfer to paper towels 5. Add another bit of olive oil, season chops and add to pan tuning once untill cooked through about 8 minutes 6. In another large skillet heat the butter until brown and then add the orzo and cinnamon and nutmeg. Toss with pine nuts. 7. Spoon the salad over the chops and top with orzo and prosciutto. |
