1 1/2 cups whole wheat penne (or your favorite pasta) |
6 tablespoons lime juice |
2 tablespoons olive oil |
1 teaspoon cumin, ground |
1 teaspoon chili powder |
1/2 teaspoon garlic powder |
1 lb pork tenderloin, sliced |
1 yellow bell pepper, sliced |
2 red bell peppers, sliced |
1 onion, cut into wedges |
1 carrot, cut into julienne strips |
1 (4 ounce) can green chilies, drained and chopped |
1 zucchini, cut in half lengthwise and sliced |
Directions:
1. Cook pasta according to package directions, drain and cover to keep warm. 2. While pasta is cooking in a bowl combine 1 tablespoon of the oil, 2 tablespoons of the lime juice and the spices (cumin - garlic powder). Add pork and toss to coat. 3. Heat the remaining oil in a skillet over medium high heat. Add pork mixture and cook about 5-10 minutes or until pork is browned. 4. Add next 5 ingredients (peppers - chilies), cook, stirring for 3-5 minutes or until vegetables are tender. 5. Stir in zucchini and the rest of the lime juice (4 T), cover and cook for 2-5 minutes longer. 6. Stir in pasta and stir to combine. |
