From Dr. Atkins Quick & Easy New Diet Cookbook. Phases 1-4. Per Serving: 5 carbs, 1.5 grams fiber, 3.5 grams net carbs, 38 grams protein, 19 grams fat, 347 calories Ingredients:
1 scallion, chopped |
3 garlic cloves |
1/2 cup green pepper, chopped |
1/3 cup tomatillo, chopped |
1 serrano chili, seeded and chopped |
1/2 cup beef stock |
1 tablespoon lime juice, fresh |
3 tablespoons olive oil |
1 1/2 lbs pork loin, cubed |
1 tablespoon chili powder |
Directions:
1. Preheat broiler. 2. Combine scallion, garlic, pepper, tomatillos, chili, stock, and lime juice in a food processor and process for 1 min until well blended. 3. Transfer mixture to a saucepan and bring to a boil. Reduce heat and simmer 10 minute. 4. Heat oil in large nonstick skillet over med heat. 5. Add pork and sprinkle with chili powder. Cook 6-8 min, until browned and cooked through. 6. Pour off excess oil. 7. Add chili sauce to skillet and mix well. Transfer to platter and serve immediately. |
