Pork Tenderloin With Sherried Apple Rings |

Ingredients:
2 (1-pound) pork tenderloins, trimmed |
1 teaspoon salt |
1/4 teaspoon pepper |
dash of sugar |
3/4 cup all-purpose flour |
2 tablespoons bacon drippings |
sherried apple rings |
Directions:
1. Sprinkle tenderloins with salt, pepper, and sugar; dredge in flour. Insert meat thermometer in thickest part of meat. 2. Melt bacon drippings in a Shallow roasting pan. Place tenderloins in pan; bake, uncovered, at 350° for 50 minutes or until thermometer registers 170°, basting occasionally. 3. Remove tenderloins to a serving platter, and arrange Sherried Apple Rings around meat. Spoon cooking liquid over apple rings. Slice meat and serve with apple rings. |
