This is a recipe that I acquired from my mom a few years ago. The marinade is incredible. Great for holidays, entertaining, or just a family dinner. It is my favorite pork loin recipe I have ever had Ingredients:
1 (4 -6 lb) pork loin |
3 tablespoons sherry wine (optional) |
3/4 cup soy sauce |
4 teaspoons brown sugar |
2 teaspoons salt |
1 1/2 teaspoons cinnamon |
3/4 teaspoon ground cloves |
3/4 teaspoon ground ginger |
18 ounces plum preserves |
1 cup chutney |
2 tablespoons vinegar |
Directions:
1. PORK LOIN DIRECTIONS. 2. Mix all ingredients into a large resealable bag. 3. Place pork loin in bag. 4. Squeeze out as much air as possible and seal bag. 5. Let pork loin marinate in refrigerator overnight or for at least 12 hours. 6. Place meat in broiler pan and brown at 450°F for 10 minutes. 7. Baste with marinade and turn down to 325°F. 8. Roast for 1 to 2 hours or until meat thermometer reaches 165°F. 9. Remove from oven and let meat rest 10-15 minutes and slice. 10. PLUM SAUCE DIRECTIONS. 11. Mix all ingredients together. 12. Serve with pork loin. |
