Pork Tenderloin And Goat Cheese Crostini |

This is a great appetizer to serve when you have leftover pork tenderloin. You can also substitute beef tenderloin. Both the marinated and regular tenderloins work equally well. Ingredients:
1 loaf french baguette, sliced 1/4 inch thick |
extra virgin olive oil |
2 cloves garlic, cut in half |
1 package herbed goat cheese |
24 thinly sliced pieces of roasted pork tenderloin |
Directions:
1. Preheat broiler and position top rack on second highest height. 2. Evenly arrange slices of bread on a cookie sheet. 3. Drizzle olive oil on each slice. 4. Place bread under broiler, and keep watch for them to turn golden brown, 3-4 minutes. 5. Remove, flip peices, drizzle with olive oil again, and place back under broiler for about 2 minutes. Watch carefully so they don't burn. 6. Remove, and rub each piece of bread with the cut side of the garlic. Allow bread to cool for about 10 minutes. 7. Spread goat cheese on each slice of bread and top with pork tenderloin. Serve immediately. |
