4 lbs pork shoulder, trimmer of fat |
6 garlic cloves, minced |
2 teaspoons cumin |
2 teaspoons oregano |
1/2 cup lime juice |
1/2 cup orange juice |
12 slices low-fat swiss cheese, halved (1/2 pound) |
24 slicer rolls |
3/4 lb low sodium ham, deli sliced |
48 dill pickles |
12 teaspoons mustard |
Directions:
1. Put pork in lightly oiled crock pot. Sprinkle with half of the garlic, cumin, and oregano. Mix remainder of the spices (cumin - oregano) and mix with the juices and pour over all in the pot. Cover and cook on low for 4-5 hours or until pork is cooked through. Transfer to a cutting board and break into pieces or shred with a fork. Skim fat and reserve juices. 2. Dived cheese among tops of rolls and broil until melted. 3. Layer bottoms of rolls with ham and pork and drizzle with juices and then layer with pickles,mustard and tops of rolls. |
