Pork Skewers With Jicama Chutney |

This is very robust and simple! everything in this dish can be found at your local supermarket! This is great in the kitchen or on the grill!! Ingredients:
2 lbs boneless pork ribs, cut into 4 strips per rib |
2 tablespoons salt |
2 tablespoons black pepper |
2 tablespoons garlic powder |
2 tablespoons chili powder |
2 tablespoons brown sugar |
3 tablespoons corn oil |
1 ripe jicama, diced |
2 scallions, sliced diagonally |
1/2 cup dates |
1/2 cup canned pineapple |
1/2 cup red onion, diced |
1 jalapeno, diced with seeds |
2 tablespoons margarine |
2 tablespoons cinnamon |
2 tablespoons brown sugar |
2 tablespoons lime juice |

Directions:
1. Slice pork and thread onto skewers, most fit 3 slices. 2. Coat them with oil and then shake on seasonings. 3. Allow them to sit refrigerated for 30 minutes, turning once. 4. Meanwhile, put margarine in a small frying pan and melt at a medium heat. 5. Put red onion in first; stir about 1 minute and add jicama. 6. Allow this to cook about 8 minutes, then add in dry ingredients; stir well. 7. Add dates, pineapple and jalapeño. Cook this about 10 minutes on slow heat. 8. Stir in lime juice; turn off heat and cover. 9. Bake your ribs at 450° for 30 minutes or grill for 30 minutes. 10. Put glaze on ribs while they are hot. 11. Top with scallions. |
